Hi Uncommon Design Readers, it’s Audra again from Cherished Bliss! I am so happy to share a delicious treat with you today. These Banana and Dark Chocolate Chip Oatmeal Cookies are wonderful in lunches, for an after school treat, or a simple dessert. Shhh…don’t tell the kids, but I have been enjoying a few cookies with my morning coffee and it hits the spot! This recipe makes 4 dozen yummy cookies and are sure to please the whole family. I know you are ready for the recipe so let’s get cooking!
Start off by creaming your butter and sugar until it is nice and fluffy, about 5 minutes. Add your eggs one at a time, then add vanilla and mashed bananas. In a medium mixing bowl add all your dry ingredients and combine well. Then gradually add your dry ingredients to the butter/sugar mixture and mix well. Don’t forget to scrape down the sides as needed. Now you are ready to gently stir in your delicious dark chocolate chips! Once your done, your mixture should look something like the this…
Drop heaping teaspoonfuls of the cookie dough onto parchment lined cookie sheets. I am such a drop by the spoonful kinda girl, so this is why I love this cookie dough recipe. Place cookies in a preheated oven and cook for 10 -12 minutes. Once the cookies have cooled, enjoy with a glass of milk or a warm cup of coffee 😉
Banana & Dark Chocolate Oatmeal Cookies
Ingredients:
makes approximately 4 dozen
2/3 cup butter, softened
2/3 cup brown sugar, packed
2 eggs
1 tsp pure vanilla extract
2 bananas mashed, about 3/4 cup
1 tsp baking soda
1/2 tsp salt
1 cup old fashion oats
1/2 cup of oat flour, click here for an easy tutorial on How to Make Oat Flour
1 1/2 cup all purpose flour or bread flour
3/4 cup dark chocolate chips
Directions:
Preheat oven to 375 degrees.
In a large mixing bowl cream butter and sugar together until nice and fluffy, about 5 minutes
Add eggs one at a time.
Then add vanilla and mashed bananas.
Combine dry ingredients in a medium bowl.
Slowly add the dry ingredients to the butter/sugar mixture while continuing to mix.
Scrape the sides of the mixing bowl as needed.
Once everything is combined well, gently stir in the dark chocolate chips.
Line 2 cookie sheets with parchment paper.
Drop rounded/heaping teaspoonfuls onto the parchment lined cookie sheets.
Bake for 10 -12 minutes or until golden brown.
Cool cookies on a wire rack.
