When I was a child, I vowed to never eat that slimy yucky gunk that came out of our Jack-0-Lantern each year. What on earth was I thinking?! Thank goodness I am all grown up now and realize that anything baked, mixed, swirled, ground, or pureed with pumpkin is always delicious. It doesn’t hurt that it is packed with Vitamin A and Beta Carotene, both of which are so good for you and the antioxidant Beta Carotene is linked to cancer prevention. So yummy and healthy… what is not to love?
