Y’all know that I am all about keeping things simple in the kitchen. This Southern pimiento cheese dip could not get any easier to make. You will find that is your perfect Summer companion for any cook out, covered dish, or outdoor picnic! It also is just perfect for tailgating of any type.
Ingredients:
2 cups extra sharp cheddar cheese, grated
1/2 cup of mayonnaise
1 4 oz. jar of diced pimientos, drained
salt and pepper to taste
Are you ready for the really tough instructions? Add all of your ingredients to a bowl and mix it up! Whew… that was a really tough one, right? You can add a little more or less mayonnaise to get it to the consistency that your family likes most. We have been cheering on our Clemson Tigers for years with this pimiento cheese, so I still make it the way my mom did growing up and grating my own cheese. Totally not necessary, but it gets me in the game day mood!
The other thing I love about this dip is that you can bring along any type of crackers, pretzels, or chips and it goes perfectly with them all. You can even make sandwiches or top a good burger with it. The possibilities are endless!

This is how I fix my pimiento cheese as well, but I also add sliced green olives and olive juice. That adds an extra good taste – if you like olives.
