School is in full swing at our house and our calendar is packed. You may remember that I told you guys that I was trying to do better with getting a healthy meal on the table for dinner. Well… I am doing pretty good! This is only possible, because I have some really tasty and fast recipes.
Today I want to share one of our favorites right now… Simple and Spicy Smoked Sausage Skillet. This meal is the definition of easy and my kids willingly eat the vegetables and they devour the Eckrich Smoked Sausage. It is so good!
Let’s learn how to whip up this dish in a flash!
First, head to your local grocery store and pick up a package of Eckrich Smoked Sausage in Natural Casing Rope. You can find it in the deli section. Eckrich is made with a signature blend of spices for a rich, flavorful taste. It’s so versatile I can use it for any meal occasion. All you need is some Eckrich and whatever’s in your cupboard to make a delicious meal – no wonder it’s one of my go to ingredients! It makes this recipe so delicious and makes it so you can deliver this meal in less than half an hour.
Next, grab some fresh squash, zucchini and a few sprigs of parsley. Let’s get cooking!
Simple and Spicy Smoked Sausage Skillet
Ingredients:
1 package Eckrich Smoked Sausage in Natural Casing Rope
2 medium yellow squash
2 medium zucchini squash
3 tablespoons olive oil
Salt to taste
Seasoning, I used a Greek mix
Parsley for garnish
Instructions:
- Chop up your squash, zucchini and smoked sausage into slices.
- Add your olive oil to your skillet and warm it to medium heat.
- Add the squash, zucchini and smoked sausage and your choice of spices to the skillet.
- Cook for 14-16 minutes. I cooked mine until the vegetables were soft and tender.
- Remove from heat and garnish with parsley.
- Serve warm with a garden salad and crusty bread.
This is truly such a quick dish that pleases my entire family. The smoked sausage flavor is just perfect, and I feel like I am getting a healthy meal in the bellies of my kids. Such a win win!
