Hey there! It’s Liz from Love Grows Wild, and I’m back with another delicious recipe for you! Today I’m sharing my Chipotle Lime Corn on the Cob, a side dish that is perfect for Summer!
Every Summer my family cannot wait for the first taste of delicious sweet corn, and I love finding new ways to enjoy it. My husband prefers charring corn on the grill and simply adding butter and salt, but sometimes it is fun to try something new! My favorite way I have found is this Mexican-style recipe, which is super yummy!
On nights when we don’t want to get the grill started, I like to roast corn in the oven. It’s so easy, and makes the corn nice and juicy. All I do is remove all the husks and silk from the corn cobs and place them in a 13″ x 9″ baking dish. I brush melted butter all over the corn and place the dish, covered with foil, in a 300 degree oven for 30 minutes. Then I take the foil off and let them cook for another 15 minutes until the corn is tender. This method produces perfectly cooked corn every time and retains SO much more flavor than boiling the ears!
Then comes the fun part… the toppings! I make a spicy chipotle lime sauce and slather it all all over the corn. Then I add some grated Asiago cheese and extra cilantro on top, which makes the corn not only taste amazing, but look beautiful too! This is a great recipe to entertain guests with, because they will be so impressed by how good it looks, that they will never guess how easy it is!
You get the delicious flavor of sweet corn with a little bit of heat from the chipotle peppers and a nice salty bite from the cheese. I like to squeeze extra lime juice over my corn to give it a little more kick! After you taste this recipe, you’ll never want to eat plain corn on the cob again!

I have never roasted corn in the oven. This looks great. My husband is a HUGE corn-o-phile. I’m definitely going to try this.

This looks so yummo! And, my hubby would love it, I just have one question. What is chipotle pepper in adobo sauce? I am thinking it must come in a jar or can? I have just never used it or heard of it. Am I completely in the dark and this has been around and used for awhile? It’s very possible, I don’t cook much, especially in the summer. 🙂 Thanks

Oh this looks delicious! The only way we have had corn on the cob is with butter… I never thought about adding anything else! This looks really tasty, a definite must-try!

I agree 100% in that I never boil corn of the cob anymore. I always steam, roast in the oven, or cook on the grill. You just can’t compare the flavor! This recipe looks yummy, I’ll be trying it for sure!
