Welcome to May. Some call it May-hem or May-cember, because this month always sneaks up with an unparalleled level of busy. I never remember how nuts it can be until I’m there. I forget every single year. Yep… this year, too!
When this time of insanity hits, I’m always looking for ways to make grocery shopping and cooking a little easier and quick. I also love throwing something on the grill and today I’m delivering some great news on making grocery shopping a breeze and whipping up a delicious Garlic and Cracked Black Pepper Pork Tenderloin Salad.

First, let’s have a chat again about Walmart’s Online Grocery Pickup. It literally saves me SO much time. This week, I decided what I wanted to cook and hopped on the Walmart website and filled my cart with everything I would need, I selected my pickup time and then continued to enjoy my fun Saturday. My order was ready to be picked up on Sunday morning and I pulled up in my yoga pants and had all of my groceries loaded into my car. You guys… it doesn’t get any better than this!
Smithfield Marinated Pork is the best because it is SO versatile and you can have a fancy and fresh dinner on the table in just a matter of minutes.
When I cook our favorite marinated pork medallions, I slice the meat before I cook, but today I’m cooking this 100% fresh cut of Smithfield Garlic & Cracked Black Pepper Pork Tenderloin whole.
I grilled the pork tenderloin on high for about 8-10 minutes on each side. Now at this point, you could eat it with a few sides, but I decided to whip up a quick green salad and top it with the grilled Garlic & Cracked Black Pepper Pork Tenderloin
I love how versatile Smithfield Marinated Pork is… the sky is the limit to how you can incorporate it into a fast dinner. It also tastes amazing… so fresh and packed with flavor. I can totally stand behind a lovely, trimmed cut of meat that is already marinated and seasoned. It really doesn’t get any easier.
I used a 50/50 mix of lettuce, fresh avocado, deliciously ripe cherry tomatoes, red onion and pepperoncini. You could totally put your own spin on the salad.
I was so happy to just add all of these ingredients to my online shopping cart and come home with everything I needed for this easy meal.
It was exactly what I needed for this crazy time in our lives, but it will definitely be making an appearance again really soon. It was a hit!
