What are you cooking this summer? I finally have a grill on my porch again and I have wasted no time at all creating this delicious and super easy dish of marinated pork medallions with fresh veggies.
I had no idea how much I missed grilling out and relaxing on my porch on a warm summer evening. I actually feel a little more balanced! Balanced in the best possible way… healthy food that is easy to throw together and sitting around the table with the family after a busy day to catch up and relax.
I have loved pork tenderloin my entire life. My mom made it all the time and this was actually the first meal I ever made for my husband when we were dating. I really had him going for a while that I was quite the cook (shh… he still doesn’t know). I really love this Smithfield Slow Roasted Golden Rotisserie Flavor Pork Tenderloin. You don’t even have to marinate it… it is ready to go right inside the package. So fast, so easy and so fancy! The tenderloin is 100% all natural pork.
With this summer being especially busy, I’ve enjoyed the convenience of Walmart Grocery Pickup. If you haven’t tried it yet, you are missing out! Just sign up for an account and start shopping online. You choose a time for you to pick it up, you show up at that time and they even load your groceries in the car for you. It is such a simple process, helps me stick to my budget and saves me loads (literally) of time.
Now let’s chat about those grilled pork medallions and veggies. If you need a quick meal that is fancy and full of summer flavor… this is it! The meat comes perfectly seasoned, perfectly marinated and ready to throw on the grill.
I sliced the pork tenderloin into one inch medallions and added them to the grill along with several cuts of fresh vegetables. Slicing makes everything cook quickly and you’ll have your meal on the table in about a half an hour.
Cook on both sides until your pork medallions are to your preferred stage. We love ours medium and the veggies should be cooked until they feel soft when you pick them up with the tongs.
If you are looking for a thorough recipe, you won’t find it here. This is so easy you won’t need one! Simply add a little olive oil and salt to your veggies and cook! Perfect for any night you need something fast. The pork also makes a delicious salad topper the next day for lunch. Score!
