Hi Friends! It’s Mallory again, from Chocolate With Grace, and thrilled to be able to share another fall recipe with you. These caramel apple scones are the perfect thing to enjoy on a Saturday morning while you browse Pinterest and your favorite blogs for cute Thanksgiving table decorations and delicious recipes for your holiday menu. Nothing like some delicious fall flavors for breakfast to get you in the mood for all the amazing Thanksgiving dishes.
Together, caramel and apple are my favorites and they are incredibly delicious all packed into a moist scone. Plus, it’s a great excuse to have caramel for breakfast! Scones have a reputation for being a bit dry, however, a few tricks of the trade will ensure your scones are tender and moist.
First, this recipe calls for heavy cream, and is an absolute necessity. The extra fat in the cream acts as a tenderizer and moisturizer to keep those scones moist. Second, avoid over-handling the dough. Its okay if a few small lumps of flour remain. In order to keep my hands off the dough as much as possible, I place all the dough onto a parchment lined cookie sheet and then pat into a disk. Then, after baking, I slice the scones into their signature shape. A little unusual, but it makes handling the dough so much easier!
Caramel Apple Scones
2 cups all purpose flour
1/4 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoon cold butter
1 and 1/4 cup apples, pealed and finely diced.
3/4 cup heavy cream
1 egg
Caramel Sauce for drizzling on top
Preheat oven to 400 F. In a large bowl, stir together the flour, brown sugar, baking powder and salt until combined. Cut in cold butter with a pastry blender until the crumbs are pea-sized. Stir in the apples.
In a separate bowl, lightly beat together the heavy cream and egg. Add the wet ingredients to the dry and stir just until combined. Place dough on a parchment paper lined cookie sheet and pat into an 8 inch circles. Bake at 400 F for 15-17 minutes or until a toothpick inserted comes out clean. Do not over bake. Let cool and cut into 6 wedges. Drizzle the scones with caramel sauce. These scones are best enjoyed the day they are made.
