A couple years ago I made a goal to use whole wheat flour in replacement of all-purpose as much as possible. After trying it out on almost every recipe I have baked I realized its really not hard and a lot of the time you can’t tell a whole lot of difference, especially in cookies and quick breads. The texture if a little heartier and maybe not as “fluffy” a little more dense, but it tastes great and makes me feel better about feeding it to my kids. Whatever gets rid of my mommy guilt, right?
This recipe comes from my mother-in-law Vicki’s kitchen. Matt always lets me know if its a good batch like his mom makes. 😉 I’ve decided the key is to have really really overripe bananas, like gross turned black and the fruit is actually brown. Every time I wait that long I get really delicious bread. So wait until you think they are over-ripe and then wait a few days more.
Everyone has a great banana bread recipe, I know, but in my opinion this one is the best.
Whole Wheat Banana Bread
{Makes 1 loaf or 12 mini loaves}

Preheat your oven to 350. Cream the butter and sugar, then add the soda and salt. Add in the mashed bananas and mix until incorporated. Add the flour in two parts and add the sour cream and vanilla alternately with the flour. Pour into prepared loaf pan or mini loaf pans. For one loaf bake for 55 minutes, for mini loaves bake for 20-25 minutes. Insert a toothpick in the center and when it comes out clean it is done.
