I love these soft and chewy peanut butter cookies so much, it’s hard to share. They are so easy to make, and the family can’t get enough of them! With school starting in just a few weeks, I only havea little more time with the kiddos home all day helping me bake in the kitchen. I hope to make the most of it and this is a perfect recipe for getting your little ones engaged, and helping in the kitchen.
Soft and Chewy Peanut Butter Cookies
To get started, you only need a few ingredients, and you probably have these all on hand without having to make a trip to the store.
- 1 cup creamy peanut butter
- 1 cup & 2 tsp granulated sugar
- 1 egg (whisked)
- 1 tsp vanilla flavoring
- 1 tsp kosher salt
Heat the oven to 350.
Once you have all of your ingredients together, it’s time to get cooking.
Grab a medium sized bowl and add peanut butter, 1 cup of sugar (leaving the 2 tsp off to the side), whisked egg, vanilla, and kosher salt.
Mix all of the ingredients by spoon for two minutes or until mixed well.
Take a scoop or teaspoon and scoop a tsp of the cookie dough onto a prepared cookie sheet. Keep your dough a couple of inches apart.
Once you have all of your dough balls onto the sheet, take a fork and flatten the dough, creating the mesh marks. Do this with both sheets of cookies.
After all of the cookies have their mesh marks, take a pinch of sugar and sprinkle the tops of the cookies before placing them into the oven. Bake for 8-10 minutes or until edges of cookies are a very light golden brown.
Remove from oven and allow to cool slightly before removing to a cooling rack.
These are some of the most delicious and creamy peanut butter cookies. It’s hard to eat just one, and such a perfect recipe to get the kids involved in. With only 5 ingredients, you will have these done in no time!
