Hi Uncommon Designs fans! I am Jennifer from PinkWhen, and I am so excited that Bonnie and Trish invited me over to contribute a few of my favorite recipes with you this Summer. To get things started, I am going to share with you an all time favorite of mine, a delicious Meatball Sub Sandwich Recipe.
Meatball Sub Sandwich Recipe
For this delicious recipe, you will need a few things to get you started:
- 1/2 pound ground beef
- 1/2 pound italian sausage
- 1/2 cup plain bread crumbs
- 1 tsp minced garlic
- 2 eggs
- 2 tsp finely chopped (fresh) flat leaf parsley
- 1/2 cup freshly grated Parmigiano-Reggiano
- 1 tsp salt
- 1 tsp fresh ground pepper
- Hoagie Rolls
- Arrabbiata sauce
- Mozzarella Cheese
First we want to make the meatballs. You can make these ahead of time and place in the freezer for use later. That then makes this recipe really quick! If you don’t have these made ahead of time, follow all of the directions below in order.
Step 1: Heat the oven to 350. In a medium bowl, place all of your ingredients (minus the rolls, Arrabbiata sauce, and mozzarella cheese) in one at a time, and mix well after each is added.
Step 2: Create your meatballs to be golf ball sized, or slightly larger. Make sure you do not pack them too tight so they can cook all the way through. Cook for 20 minutes, and then turn and cook for an additional 20 minutes. I like to make my meatballs in a muffin tin for super easy clean up.
Step 3: In a sauce pan, add the meatballs to the Arrabbiata sauce, stirring until they are completely covered.
Step 4: Take a 9″ x 13″ baking dish and cut open 4 Hoagie rolls, lining the dish. Scoop 4 to 5 meatballs and line each roll, adding a little sauce as well.
Step 5: Once you have added the meatballs and sauce, top with Mozzarella cheese and place back in the oven for 10 minutes until bread is soft and cheese is melted.
This is such a delicious recipe, and always one of our favorites for lunch or dinner. I hope you enjoy this Meatball Sub Sandwich recipe as much as our family does.
